Kuy Tiev Sach Ko (Beef Noodle Soup)

Ingredients:

  • 2 1/2 lbs – beef soup bones
  • 1 lb – beef eye round cut (super lean)
  • 1 lb – ground beef
  • 1 pk – beef & beef tendon meatballs
  • 1 lb – large shrimps
  • 1 – large onion (quartered)
  • 1/4 cup – fish sauce
  • 6 – star annis seeds
  • 1 pc – sweet radish
  • 2 cubes – instant beef broth powder
  • (2) 1 lb – rice noodle sticks

Directions:

Fill pot with 3/4 with water and boil on high heat. Whenever water comes to a boil, add in 1/2 cup of fish sauce, large onion, 2 sweet radish, 5-6 star anis seeds and 2 1/2 lbs of beef soup bones. From the time when you have placed all of the above ingredients in, set your kitchen timer for 1 hr. Remember to remove *all froth that forms at the top of your soup broth. And if you see your broth decreasing, just top off with more hot water to its original level. 30 minutes into boil, add in your beef tenderloin meatballs. 45 minutes into boil, add in your beef bouillon cubes and instant beef broth mix. Cook your ground beef – in a wok or skillet with no oil, just stir until it’s cooked and set aside. Prep and slice all your meats. Prep and wash all your veggies. And of course prep your noodles too. Assemble your bowl of delish Kuy Tiev Sach Ko. Enjoy!
